Nettle Pancakes
Nettle pancakes are one of the spring wildfoods that we prepare during Sussex Wildlife Trust’s Forest School events & training
Recipe
- Make a regular pancake mix using equal volume of eggs, milk and flour.
- Wisk with a medieval looking whisk crafted in the wood from a few sycamore branches
- Nettle tops were blanched in boiling water and added to cooked pancake with a load of cheese. Please wash nettles carefully before use.
- We also added a few ground ivy flowers and leaves for extra flavour.
- Enjoy
